My mom used to make this all the time when I was growing up.. especially in the summer when we had plentiful cucumbers.
I'll have to try it w/Splenda. I'm always looking for zero point foods that are yummy!

This is a wonderful recipe to keep ready in the fridge--eat as a side dish, on a salad, in another recipe, great idea.

I do this with apple cider vinegar and add crushed oregano to it. I keep this in my fridge all the time. It's great added to a mixed green salad or served on its own as a side dish.

I made it with Seasoned Rice Vinegar. Delicious!
