I am feeling really good. I am averaging almost a pound loss daily. I really enjoy cooking up healthy options for Jim and me. Yesterday was pretty special because I baked a Low Carb Pound Cake. Jim's most all-time favorite dessert is pound cake, and all these years we've been married I have never once baked it for him; mainly because it so fattening, but secondly, b/c I knew that whatever I baked would likely pale in comparison to his Granny's pound cake, which she would often ship to him when he was in the Army. Boy, did he love her baking!

Well, I recently found a Low Carb Pound Cake recipe on this website and I thought, what the hay - let's do it. The staple ingredients are Almond flour, Splenda, vanilla and lemon extract, etc... I baked it last night and I could not believe how much Jim loved it! He is not much of sweets eater - so I was shocked when he went back for a second piece, admitting he had to make himself resist getting a third piece. The texture of the pound cake was a tiny bit different - a tad bit grainey due to the almond flour, but quite good nonetheless. Jim said it is the best pound cake - right up there with his Granny's...which made me so happy.

I had one day this week that was a bit disappointing... A friend suggested I drop my net carbs down to 15 b/c of metabolic syndrome (from my PCOS) and doing this left me with a 900-something calorie intake...and I was hungry before bedtime. This day broke my 1-pound loss daily streak - I think because my brain told my body it was starving so hang on to everything you get... I gained one pound at my early morning weigh-in as a result...and then, the next day (Friday) having gone back to around 20 net carbs, I took in enough food for the body to lose fat naturally. At my early morning weigh-in I see that I lost that irritating pound. I just need to remind myself to listen to my body - and do what is working for me. If I fuel it properly it will work for me properly. Eat just enough to lose steadily. Too much is harmful and too little is harmful. I feel very very good with the steady weightloss I've seen this week and I plan on keeping it up!

One pound a day is awesome!! Congrats on figuring out what works best for your body. And I may have to try that pound cake...it sounds scrumptious. How many carbs are in it? Have a great weekend.

Thanks ctlss! It's more like "almost a lb a day" - something like .8 daily, I think. The Pound Cake is 6 net carbs. (Yesterday, I had a mostly-protein day with a salad at lunchtime, so I needed the pound cake to get my carbs up to where I needed them to be so I would lose...and I did!)

Hmm, that is really awesome. May just have to make one of those for Christmas. Have been trying to find some new recipes for all my Christmas baking.

Sandy and Steph, I've pasted the recipe for Low Carb Pound Cake for you below: Let me know how it works for you! :D POUND CAKE 1/2 cup butter, softened 4 ounces cream cheese, softened 1 cup granular Splenda or equivalent liquid Splenda 5 eggs, room temperature 1 teaspoon lemon extract 1 teaspoon vanilla 6 1/2 ounces almond flour, 1 1/2 cups plus 2 tablespoons 1 teaspoon baking powder Cream the butter, cream cheese and Splenda with an electric mixer. Add the eggs, one at a time; blend in the extracts. Mix the almond flour and baking powder; add to the egg mixture a little at a time. Pour into a greased 9-inch round cake pan. Bake at 350º 50-55 minutes. I suggest checking the cake after 40 minutes or so because mine was done in less than 45 minutes. The cake will be golden brown and firm to the touch when done. Makes 8 servings Can be frozen With granular Splenda: Per Serving: 346 Calories; 31g Fat; 10g Protein; 9g Carbohydrate; 3g Dietary Fiber; 6g Net Carbs With liquid Splenda: Per Serving: 334 Calories; 31g Fat; 10g Protein; 6g Carbohydrate; 3g Dietary Fiber; 3g Net Carbs This cake tastes just like Grandma's pound cake, but perhaps a slight bit more grainy from the almond flour. This is so good! I think little muffin-sized cakes would be great split and filled with strawberries and topped with whipped cream. I might also add a little grated lemon rind or even try it with orange extract and orange rind. Other than the adjustment in the baking time, I made one other change. The original recipe said to stir in the extracts at the very end and I decided to skip that step and just put them in along with the other wet ingredients. I used liquid Splenda in mine and the results were outstanding. LOAF CAKE VARIATION Bake in an well-greased 8x4" loaf pan at 325º for 50-55 minutes or until well browned. Place pan on cooling rack and let cool 10 minutes before turning cake out of pan.

A low carb pound cake? Very cool! cake Although I don't follow Atkins, but I tend to follow a low carb diet. Now I don't like eating too many carbs, because it seems to slow me down.

Way to go Evie!!! You have done a remarkable job. That pound cake sound scrumtious. I think I will copy it down and give it a try. @Runesinger, I doesn't matter if you follow Atkins or not, we are all here doing the same thing. LOSING WEIGHT. Best of luck to ALL on our journey's. Johanne, I see what you are asking -- that "1 1/2 cups plus 2 tablespoons is referring to the almond flour (6 1/2 ounces - since most people don't know what 6 1/2 ounces "looks like", the supplementary measurements in cups is provided for you. Does that make sense? Sorry it is all scrambled together. I copied it from WORD- my document is nicely printed in a long, neat list. But when I pasted it on here it just mushed it all together in one big paragraph. (The teacher in me frowned upon seeing the finished-work of the posting.) LOL

want2lose: You are very very welcome! Hope it turns out great for you. I served it with whipped cream - and had cut up strawberries to add to Jim's piece(s) but he declined them. He just wanted the cake all by itself... surprise, surprise... Laurie: You are such a sweetie! I love how encouraging you are. Can I clone you and bring your copy to live with me here in Virginia? You are the BEST, woman! You are such a cheerleader - EVERYBODY needs a Laurie in their corner. (Thanks for being in mine...) Sandy, the "inventor" of the recipe did mini-loaves (just reduce the baking time)...and she also did a variation in a bundt pan...and even muffin-sized servings of the pound cake for individual servings. This will pretty much work any way you want it. Runesinger: Yeah, no problem. Atkins or not, this is a low-carb, sugar-free wonder. The cool thing is that it is packed with fiber and a good amount of protein - so as far as desserts go, it is quite healthy. Hope you enjoy it!

Oh Evie, Virginia sounds wonderful. I really wish I could convice the husband to move from here(Vermont), but I can't. I'm am so ready. I'm really fed up with fighting these winters. Your welcome. I LOVE to see people succeed and to be happy. Life is just too short to be angry. Laurie, see what you can do about getting hubby to vacation down here. There are LOTS of "northern transplants" here. Hee hee... Folks love the postcard-perfect views - we get four distinct seasons all year long, but the winters are so much more mild and pleasant. I dislike the extreme cold, too. We had a 2 yr stint in DE - not too far north of here, but North enough for me. I remember the first "big" snow-storm - 36inches and, boy, did I get "cabin fever". I remember leaning against the front windows, looking somberly at the blanket of snow and ice EvErYwHeRe and feeling mopey...the snow kept coming and coming with no end in sight. I finally asked Jim, "Honey, will I ever see the grass again? Will I ever get out of these four walls? I can't take it anymore!" (I was a dork, what can I say?) I love being in the South again. Maybe the "cheaper" prices on taxes and realestate might motivate your hubby a bit. There is a lake community close to us that is quite popular with the "northern transplants" - come check it out. I would LOVE to be "neighbors" with YOU! I have always wanted to visit Vermont / New England territories during the Fall. I'll bet the views you get to see are extraordinary. I am making this..it is in the oven as I write. I'll let you know how it came out...thanks again for the recipe. Just trying it plain as I did not pick up anything to go with it.
