Some of you asked for my low-fat macaroni & cheese recipe ... here it is ...

Your Basic Macaroni & Cheese
3 TBSPS liquid Butter Buds 1 1/2 to 2 Tbsp flour 1/2 tsp. lite salt (optional) 1/2 tsp. pepper 2 cups skim milk 1 Tbs. liquid Butter Buds 2 cups elbow or shell macaroni, cooked 1 Tbsp. grated onion (optional) 1/2 tsp. lite salt (optional) 1/4 - 1/2 tsp. pepper 2 cups grated non-fat cheddar cheese 1/2 cup crushed Pepperidge Farm seasoned cubed style stuffing
Prepare white sauce by combining Butter Buds, flour, sal, pepper, and slowly adding skim milk. Stir with a wire whisk until smooth and thickened. Set aside. Place half of the cooked macaroni in the bottom of a 2 qt. glass casserole dish, that has been sprayed with a non-fat cooking spray. Sprinkle with half of the onion, salt, pepper, and cheese. Repeat. Pour sauce over the casserole. Drizzle 1 Tbs. liquid Butter Buds over the top.
Sprinkle remaining cheeses over this. Sprinkle crushed stuffing cubes on top. Cover and bake for 30 minutes at 350 degrees. Uncover and bake 10 minutes longer.
