Broccoli Cheese Soup

A wonderful low carb cheesy broccoli soup.

  1. Bring broccoli and broth to boil, simmer for 5 minutes.
  2. Add cheese cubes and heat on low until cheese melts.
  3. Add salt and pepper to taste.
  4. If soup is too thick, add heavy cream to thin to desired consistency.

Family liked it. Can really taste the fresh broccoli.Had to go easy with the salt,a little goes a long way.

I made this with reduced fat shredded cheddar cheese and it clumped up really bad and stuck to the spoon and the broccoli. Next time I think I will try Reduced Fat Velveeta. The same amount has only 729 calories compared to the 816 calories that is in the cheddar cheese the recipe calls for and it will probably melt a lot better!

I loved this recipe! I used regular shredded cheese and had no problem with it melting. I also used fresh broccoli and left bigger chunks because I love broccoli! I melted my cheese into the cream in the microwave, so maybe that is why it melted better!

Love this recipe, can't wait to make it. On atkins though I would sub the lf cheese for full fat. Takes total carb down to 4.5 per serving.

I found that if the cheese is 'clumping' to use a spoon with holes in it, and using a blender, pull out most of the large pieces of broccoli and cheese and pulse into a blender making it almost like a paste then pour it back into the main pot while it's cooking. Made it much smoother and Oh So Good! Yum Yum! My very first attempt at making a soup with cheese and I surprised myself how good it turned out.

This rocks! I used kraft melts american and cheddar cheese along with a little normal mild cheddar. Husband doesn't know why i chopped broccoli so small but oh well. I have a food chopper and it really helps. Oh I also chopped up a chicken breast and put it in there.
