Crockpot Chicken Vegetable and Brown Rice Soup

A veggie and chicken soup with brown rice to keep you warm when the cold keeps you in.

  1. Prepare a crockpot.
  2. Add all of the diced vegetables into the crockpot. Also add the diced cooked chicken breast.
  3. Add the water and chicken stock.
  4. Stir in the brown rice.
  5. Season with pepper and thyme.
  6. Cook until the rice is tender and done, about 6-8 hours.
  7. Note: this is a meal that can be started in the morning and eaten when you get home for dinner.

I modified the recipe: used addl 1C of stock & water, added a sprig of rosemary and 2 leafs of sage and added some wild rice..but, I thought the broth was still a little bland. Maybe next time I'll add some oregano or basil, but there will be a next time--it was good!!

Seems like a great recipe but, shouldn't be under the detox phase since no meat is allowed yet...can't wait to try it once I get to phase II though! :)

I added some grated parmesan for a garnish, and it just added a little saltiness. I LOVED this soup.
