Lentil with Mixed Vegetables Soup
Relatively quick, easy, and very inexpensive lentil soup with assorted veggies.
材料

- Rinse the dry lentils, drain, and place in a large stock with about 4 tablespoons of salt in a pot with water covering the lentils and about 3 inches above.
- Bring to a boil, then add the carrots, onions and potatoes. Reduce heat so soup is at a steady simmer.
- After about 40 minutes, add the corn (frozen or canned) and check lentils to see if they are soft through. If not just check them every 10 minutes until they are ready.
- Check to see if the soup needs salt. Once it tastes ready, serve hot.
- You can squeeze fresh lime juice into the soup, Tabasco, Sriracha, anything you think will enhance the flavor. Enjoy!
- Note: feel free to add or substitute vegetables as you see fit. This recipe will make a lot of very versatile soup, which also freezes and refrigerates well.

This soup is very rich in nutrients, and by putting no salt at all, just add black pepper and turmeric…soooo good!!!

I eliminated potatoes and put less salt and it was good ..really good
|
4 tablespoons of salt for 15 servings seems a little high. It is just as good without all that salt but I only used 1 potato instead of 2 and eliminated the corn due to my low carb diet. Voila! You have traditional lentil soup. But it's good.

Way too much carb for this plan. But it sounds really good.

I love that I can even blend this up for a tasty veggitable smoothie on the run. I've also substituted green sea salt for stronger flavoring
|
waaay too much sodium, but I will use salt-free seasoning and love it
