My light version of Shrimp Coconut Red Curry. Made with lite coxonut milk, red curry paste, Splenda, and powdered peanut butter served over Shirataki noodles. First time trying to slim it down a bit and it turned out delicious!

My two week weigh-in is here. A little slower than I'd like, but I think I just had a weird mental block as I really really wanted to get below 206. I did it, but just barely :). 206 is where I was pre-kidney-transplant, back in January of 2018. By August 11th, I was up to 271 and barely able to move around. My knees, my back, everything hurt and it was really hard going up and down stairs. Now, I'm back to where at least I feel comfortable in my own skin.
65 pounds down and only 76 more to go. Feels good man. Thank you all for hanging with me during my long journey.
