So over the weekend I had to go home for a funeral. I decided to do an experiment to prove to my wife (she is finally on board with LCHF by the way) what happens when you eat carbs. For the whole weekend we ate like we normally would when we travel. Fast food, pizza, muffins, homemade cookies, etc. After 3 days of this I weighed myself in. I had gained 8 pounds, and she had gained 6! I was amazed at how fast it came back. Now, three days after being back and eating a strict LCHF (no more than 20 carbs) I have lost 5 pounds of it. I was truly amazed at how fast I gained, but also how fast I lost. Now if I can only keep the momentum going on the loss side that would be awesome. I know it won't, but I'll be happy to return to my two pounds per week loss.

I am a history and data nut. I love researching topics that interest me. one such topic is type two diabetes. it is quite interesting to see the history of it.
Diabetes used to be known as the wealthy disease. why you ask? back before the late 1800's sugar was expensive. in fact, if a regular person owned any they would hide it. they only used in on special occasions. typically, if. aperson was fat they were wealthy. it's where the term fat cat banker came from. normal people could not afford things like cakes, pudding and jello. they also could not afford sugar based bread. the normal person usually ate hard tack or sourdough bread. Dr. Banting was really the grandfather of LCHF, having written a book about low carb eating back in the early 1800's.
If you're like me and you really want to get to the bottom of nutrition, then you really need to read Bantings work. We are living proof of what happens when a society has unrestricted access to this type of food. we have no self control and we tend to overindulge. it's no wonder we are a sick and overweight society

Slow and steady. Exactly one month and averaging 2 pounds per week. just what I was aiming for. Should reach my goal weight by May 1.
