New favourite fall snack / light lunch:
Layer in order given
2.5” zucchini slices (1/6” thick)
Smear of red pepper and garlic hummus
Slice of Roma tomato (1/6” thick) lightly salted
Sprinkle of aged shredded cheddar
Dill pickle chip, if desired
- So yummy! I had 7 of these for lunch (because that’s one Roma tomato.)
Refreshing, delicious, and satisfying!

I left the pickles off mine (because salt,) and I wouldn’t salt the tomatoes next time, either. Hummus already has salt and so does the cheese. (203 calories.)
