So I am totally guessing on the enchilada. I made them myself so a lot of the ingredients came from our garden. On the other hand if it keeps me full and I don't need to snack then if I am off and it's not enough calories then it's all good. On a side note, you know that feeling that you get when you put on a pair of pants you haven't worn in a while and they fit, not too tight. A great way to start the work week!
