I made "cookies" last night. I say that in quotes because they came out more like scones (or what I like to call "cookie balls" since that's what they look like). I accidentally used a different ingredient for one of the ingredients so that's probably why it came out so scone-y. I also ran out of Splenda, so I substituted with low carb brown sugar. The cookie-scones did not come out particularly sweet. I think next time I'll try a different recipe and make sure I have enough of my ingredients. I was just so excited when I got my low carb chocolate chips that I wanted to make chocolate chip cookies right away without checking all my ingredients. Oh well. Live and learn.
