I am planning on 1200 calories per day for the month of April because I am very curious what my body is capable of at Maximum capacity. To do this I will find foods that have equal calories, different portions. Example: 1 cup of white rice 220 calories vs 10 cups of cauliflower seasoned with herbs and grated parmasan or my favorite a large baked potato with pico de gallo vs. the baked potato with sour cream and butter. I also love large bowls of salad greens mixed with 1 cup of beans such as Ranch and pico de gallo. Air Popped pop corn for a snack and other favorites to rediscover and new favorites to find! Lots of veggies and some wonderful fruit. From my past success with losing weight I kept motivated by doing mini challenges as long as I was having fun with it. I am so proud to be moving successfully into month #4! TOWANDA!!!!

That sounds like a really good idea. Never thought of it in that way. Good luck to you! I can't wait to finish my exams in order to start focusing on my diet strictly.

Yay for cauliflower! There are so many ways to prepare it, and it's way more yummy than I ever thought when I was a kid. Try caramelizing some onions, then mash the steamed cauli with a potato masher and fold in the onions and some S&P. Major yum.
