Finally, a full 8 hrs of sleep. I feel sooo much better today. Blue skies and cool temps out there too. I am looking forward to another long walk with Bubs. Still plenty of work to do, but not overwhelming. Better plan ahead for meals: need to eat a peach with oatmeal for breakfast since they're started to get mushy. Caprese salad and avocado for lunch since those are about to be overripe too. I could add a boiled egg to that and I bet it would be delish. Maybe I'll go out and pick up some fish at the shop in VH. A salmon or catch of the day. Broccoli or broccoli rabe. Fennel maybe? Time to make some more beans in the pressure cooker. Or pureed cauliflower mock mash taters.
Update: Had the caprese salad, but I overcooked the boiled egg that went with it and the avocado was a tiny bit overripe. Still it was just what I wanted for lunch. For supper, I picked up some triggerfish at the fish market and it was fantastic. Mr Coco made a wine reduction sauce with capers that was out of this world. He watches Jacque Pepin and Julia Child reruns all the time and it pays off!
