Day one of the elimination diet was spent mostly NOT eating. Tried drinking my coffee with coconut oil instead of milk & sugar. Nope. Not for me. Had a day full of appointments so no food until late. Almost threw in the towel, moved my start date, and hit the Chinese buffet. Luckily, my husband suffered my hangry ire and took me to the grocery store. We grabbed a roasted chicken, roasted up some broccoli and Brussels Sprouts, and threw together a green salad. Made a double batch of balsamic vinaigrette to top it all off. I was just so happy to be eating. Our nutritionist still hasn't sent us a list of good food/bad food. Really not sure how to proceed other than NO Dairy, NO Eggs, NO Grain, NO Nightshades, NO Nuts, No Legumes. She also talked about really well done vegetables and smoothies in the beginning to help heal my digestive tract. Will look into that more tomorrow. Gonna snuggle down with my husband and some grapes. I'll try coconut milk in the coffee tomorrow. I'm open to suggestions...

I like Almond Milk Creamer :) with a little stevia.

Thanks! I can't have nuts, so almond milk is out for now. I'll have to ask about stevia, because I was confused by the ingredient list on the stuff in the grocery store.

I also jumped on the elliptical for 15 minutes, as agreed. Now my food is in my esophagus. Today's doc suggested sipping aloe, hereinafter referred to as my nightcap.

I missed that 🤭 But stevia is amazing! I also like the sugar free Torani syrups (I like my coffee!) - but they have aspartame in them. I’m not sure how that would work for your diet either 😢

Finally got the document from the nutritionist... Stevia is out for now. I can have honey, maple syrup, and molasses. Yesterday's coffee was palatable with honey and coconut milk. Coffee/caffeine is on the DO NOT list, but I am ignoring until I meet with her next week. I'm already really cranky. I need this for now. ;)

Try blending your oil with the coffee and top it off with a little sprinkle of cinnamon or pumpkin spice.

It's all I can do just to get the coffee into a cup in the morning. LOL!! <3
