So I tried a new recipe, Butternut Squash Muffins, via Food Network's Jamie at Home. Here it is:

I didn't make the frosting and I substituted the fresh squash with a 12 oz pack of frozen pureed squash (I don't have that kind of time!) and instead of a 3/4 cup of oil, i used 1/2 cup of applesauce and 1/4 cup of oil.
If you try it, let me know. They are tasty! I just wish Food Network would put nutrition facts on their recipes...
