Blend the first five ingredients together in a food processor (or you can mince finely the herbs and garlic and grind the herbs by hand if you want). I added pork skin crumbs to stretch the recipe, but you don't have to. Combine with meet and shape into sixteen 1.5" balls. Brown in a skillet or bake at 400 F for 20-25 min. You'll need a drip tray if you use the oven method or they will be sitting in their own grease when you pull them out. Enjoy!
