I LOVE pancakes made with buckwheat flour (not the packaged ones, which also have a lot of wheat flour). Haven't had them for a long time, thanks for the reminder. :)

Is your buckwheat roasted? Mine is a lot lighter. I make a fermented glutenfree bread out of mine :)

I believe these are roasted. They smell toasty. Honestly I didn't really know what to look for when I bought them for the first time and they came out of a bulk bin so I can't check the package, ha. I soaked and boiled a cup and ate half of them yesterday as breakfast cereal with coconut milk and honey. Today I'm going to try them with chicken, asparagus, and parmesan cheese. They have an earthy flavor that I kind of like. Larry, they are not low carb, but they are nutritious and free of allergens. The macro breakdown for 1 cup cooked is 33/1/6 C/F/P at 155 calories and 5 g fiber. I hope that answers your question on whether they are healthy or not. It really depends on your dietary needs. They would likely kick you out of ketosis, but they fit my diet plan. Definitely soak them overnight, as that makes them easier to digest by removing a lot of the phytic acid. Fermented bread sounds wonderful. Maybe I can make time to bake this weekend, but it's never been my strong suit. Do you have a resource you'd recommend, schmetterlinge34?

I like buckwheat. I used to put it in yogurt. I don't eat yogurt anymore. Plus, I ran out of buckwheat.

I use them to make pancakes and muffins. It's still a grain but seems to be more healthy than most

I love them with just butter and salt. So yummy- but I've transitioned to a ketogenic diet. Maybe a little during maintenance. Enjoy! So yummy with a little rotisserie chicken on top. Mmmmmm.
