Finally it's friday! My cold/flu is starting to break now, all I have left really is an annoying cough. Plus my dark/sad mood that has plagued me the last little while has seemed to lessen too. I am beginning to think that it definitely had something to do with the crap that I was eating. So now I am back recording everything and have been successful at staying within my RDI. Sure I still take in a lot of carbs, but from what I have read and researched not all carbs are created equally. Not to mention the power of drinking fluids, not just water! But herbal teas, diluted fruit juice, and switching between soy and almond milk.
The other good thing I have been doing is creating a recipe book, all yummy vegan/vegetarian foods. With doing this I figure it will make creating meals a whole lot simpler, and most (if I really like them) I can make in larger quantities so that I can spread them out easier through the week. I guess the trick to this whole thing is planning and looking for simple techniques that make it easier to follow and stick to. So yeah apparently it this process will fall into place like a giant puzzle!
