One of my biggest weaknesses is ethnic food! Mexican holds a special place tho! Worked with 70-80 truckers, mostly Hispanic. Their wives could really cook some delicious food! Trying to duplicate with healthy ingredients and methods. Sometimes ya gotta go with the real deal! Yours looks yummy! Have a Wonderful day,
