I could just “dive” in. What does drying the thyme do? Is it more flavorful?

Sarah, I prefer fresh herbs. I think the flavor is more distinctive. My thyme bush is in the front yard and I accidentally sprayed it with chemical for other stuff so I had to resort to thyme that I dried last year. But it still did the job. 

Thanks everyone! John, I think that the fresh herbs and really the amount of herbs used made a huge difference! I have made this dish before but this came out way more flavorful. What happened is that my herbs are overflowing outside so I got reckless and cut way more than I would usually use- over a handful and then threw them into the food processor with about 8 cloves of garlic and then sautéed them in vegetable broth before adding the other veggies. I won’t mind having the same thing for dinner tonight!
