Sunday weigh in:

Gilliansings - lost 1.5 pounds. Congratulations!
Ewinwarrior83 - lost 3.4 pounds. That is fantastic!
Myself - gained 4 pounds (as discussed in yesterday's journal)

Got lots of hard work ahead of me this week. I know a couple of pounds will go quickly because of yesterday's dinner (I am allergic to nitrates, yet I ate the corned beef anyway).

I have a birthday party to attend this afternoon at our favorite Mexican restaurant. They have fabulous healthy menus, so as long as I avoid the chips I can stay on course!

Love that corned beef!!! Hope no allergy issues from it. I'm also allergic, ended up a mess last year about this time from eating too much of it. I was planning on corning some nitrate free myself but haven't done it, need to try that. Skipped the corned beef this year had an Irish potato and cabbage dish for Snake Saturday yesterday instead. St Pat's day will be a side of that leftovers and batter "fried" fish (in the oven). Workin day can't go play at the parade etc.

Wholefoodnut - I think a lot more of us are allergic to nitrates than realize it. They just blame it on the salt. I am not the adventurous cook that you are, so wouldn't dream of trying that myself. If you do, please let me know how it turns out.

I just love to cook, have since I was little. Currently have 5 cookbooks spread out on my bed for reference planning meals for just me this week. I keep looking at beef and hate to spend the $$$. The best corned beef I ever had was when we owned a restaurant. We did a St Pay's buffet and obtained a steamship round ( they are huge) that was corned instead of brisket. I've been watching at the restaurant supply for them to have inside rounds in a small enough package, they have them now and then. Since I've eliminated all processed meats and sausage it has made a big difference in my asthma. I love Italian sausage and was thrilled when I found a butcher that is in my work-a-day travel route that makes delish. Sausage with no nitrates and no msg. Deli meats are awful and so are veggies on salad bars and many of pre-washed packaged veggies as they are usually treated to keep them fresh with a nitrate solution. Not something that currently has to be disclosed on the packaging.

I know there are multiple dangers in using bagged salad products but that is one of the trade offs I feel compelled to make. Every time I buy fresh greens most of them end up in the trash. I have even tried planting them in my garden. This makes the rabbits very happy :)

I definitely get the rabbits!!! They have eaten most of mine till last year. My pom mix dog I assumed would keep the rabbits out of my yard. My back yard adjoins a park and a wooded wild creek area so lots of rabbits. No not the case he makes friends with them and plays with them!! It so fun to watch. My Boston mix pup now she chases them. Need to get some greens mix planted this week. When I lived in the country I had a huge garden, I just planted lots, some for the critters and some for us. I try every weekend to take those greens if leftover and make soup. The French and Italians have many soups and other dishes using those greens. One of the best soups I've made lately was split pea and about a pound of spring salad mix, their stuff isn't normally treated. I bought a big bag for $1.50 at a vegetable stand of course couldn't eat it all as salad. Makes for good lunches to take to work or a quick light dinner.

Hay I love cornbeef too and I can't wait to have it today. At least you see what you need to change and looking ways to change your eating. Have fun at the birthday party and just relax.

Yup you can cook any salad greens. French lettuce soup is really good. Spring mix usually has baby spinach, radicchio, baby chicories, sometimes arugula. Use it instead of spinach in a stir fry. Yummy!

BuffyBear, enjoy that birthday party and the healthy Mexican food. I enjoyed my semi-healthy Mexican food on Wednesday. Weigh-in results = 1.5 lbs. lost this week.
