Soo.... I caved into my pastry craving. Oops. Oh well. Today has been a sort of "cleansing" day, lots of raw veggies and fruits. Lots of water, and some tea. Last night I made an interesting vegan comfort food... chili cheese potato casserole. It was basically scalloped potatoes with a layer of chili in the middle. The cheese sauce was made with nutritional yeast, soy milk, and vegan butter. The chili was fire roasted tomatoes and black beans, very spicy, with onions. It was really good, but majorly not-healthy once I realized how much butter was used for the "cheese" sauce. I only had a small portion. Definitely something to eat in small amounts. Lol. Today I made a fantastic salad with red and green leaf lettuce, easter egg radishes, carrots, tomatoes, green onions, cucumbers, almonds, and a ginger dressing. So. GOOD! I also prepared some adzuki/aduki beans but haven't thought of what to use them in yet.
