The good news: I think I've invented a pretty good low-carb dessert dish, consisting of ricotta cheese mixed with sugar-free jello powder. It needs some tweaking -- I think I'll substitute cottage cheese for the ricotta, and use about half the amount of jello powder -- and when I'm happy with it, I'll post it here and submit it to the Recipes section.

The bad news: It's 10:15am where I am now, and I've already eaten it all.

It appears that I didn't "invent" this at all! Just found a bunch of similar recipes on the Internet by searching "ricotta jello". Oh, well!
