Sorry for the delay in replying. For me, I use 2 large eggs, beaten. Heat some oil or small knob of butter in a non-stick pan, pour in eggs, use a fork to disturb egg mixture about the bottom of the pan, add fillings of choice, flip one side onto the other, turn off hob, allow to stand in pan for 1 further minute, serve!
