I have tried it with Flax too (mix of flax meal and almond) I think no matter what you do its slimy because of the coconut oil? it always stays liquid almost.

Nice! I’ve made flax muffins with coconut flour that are really good. They are not slimy like other baked goods with flax. I think the coconut flour fixes that problem. Website’s called forest and fauna if you’re interested.

@pixie68 I’ve tried making pancake with flax too and it still kinda icky even when I did’t use foconut oil. I’m not sure why hehe 😅 maybe I’ll try mix it with coconut flour next time. Thanks @CrashtestDawnie I’ll definitely check it out

I have a humongous bag of coconut flour so I’ve tried lots of recipes but it’s an odd substance lol But works perfectly in the cinnamon flax muffins!
