It's Zucchini season 🙂
Just made a zucchini lasagna and it was so yummy (and not too high in caloric intake).
Anyone else have good zucchini recipes? I've got about three more ready to pick from my garden.

I love zucchini! One recipe i make, i cut the zucchini in half, scrap the inside (keep it for omelette) and fill the inside of the zucchini with ground cooked beef (i add to the beef, half an onion and some pine nuts). Then dice 2 medium tomatoes and boil the zucchini in a large pan with the tomatoes and some dried mint. Easy and delicious!
