I have the same issue of not getting enough calories, but my high carb meals never look that good!

@Magpiezoe I fry mine in a cast iron pan with leftover bacon grease from my home cured bacon. The best way I have ever been able to make them. I love putting rosemary and pecans in it too.

Love Brussels sprouts that get brown. I learned to like them by cooking in a frying pan with olive oil and a few slices of bacon. Now I don't need the bacon!

@Fritzzy 22 me too, crispy ones not mushy is my fav! Olive oil should not be used for frying the smoke point is super low. If you don't want bacon try avocadi oil it has a high smoke point and still in the healthy fat zone.
I raise my own pork, they're fed organica and raised in a pasture, making the fat healthy not the bad fats.

Thanks,but I've been stir frying in a wok for years using olive oil and have no intention of stopping. Don't eat bacon any more except very rarely when I go out for breakfast. I stir fry Brussels sprouts, mushrooms, onions, celery often. As long as I have everything chopped up in the fridge it takes just a few minutes to cook.
